A friend came over for a meeting a couple of weeks ago and brought with him a few boxes of buko pie from Los Banos, Laguna. We haven't eaten buko pie in a while as we preferred the ones we bought whenever we were in Laguna or Cavite.

The pie is basically layers of coconut 'meat', mostly young coconut for the taste and texture. The more mature coconut is often mixed in for some crunch.

What we usually bought whenever we were traveling in Laguna were buko pies from D'Original Buko Pie. They still make really good buko pies but friends from Los Banos say that Lety's is now better if not par with them.
