What's for dinner?

We love seafood and we eat fish more than chicken, beef or pork. We also like mushrooms and so it was only logical that we combine fish and mushrooms to come up with a tasty dish we usually have on our dinner table. The Clairvoyant concocted the dish shown below, one time experimenting on the cream dory (pangasius) fillet that we regularly purchase from the grocery. Cream dory goes very well with shiitake mushrooms and when cooked in oyster sauce produces flavors that would surely satisfy one's gastronomic urges.

Cream dory has become very popular in the Philippines and elsewhere because of its versatility for use in many dishes. We have tried frying it (plain or with onions and pepper) or steaming it. We have combined it with black beans (tausi), chili, pepper, oyster sauce, etc. One particular dish we like to try replicating is the dory dish served by Max's (fish fillet in black bean sauce), ironically a restaurant specializing in fried chicken (they're well known for this!).
